I’ve got a quick and easy breakfast idea for you today. It’s a fresh and fruity tropical sunshine smoothie made from a blend of pineapple, mangoes, orange and carrots.
This super refreshing blend of tropical and citrus fruit always reminds me of warm weather and sun-filled days, which is why I call it a sunshine smoothie. I also happen to think it’s a pretty nice way to start out your day on a bright note.
What's in a sunshine smoothie?
You’ve got a veritable medley of fruit flavors in this icy delight like sweet mango, pineapple and orange.
Carrots add a bit more natural sweetness and nutrition, and a touch of ginger brings a little zip to wake up your taste buds.
Finally yogurt makes the smoothie nice and creamy.
Of course the best part is sipping on this sweet, tropical blend while day dreaming of palm trees, sunshine, sandy beaches and clear blue waters….

Sunshine Smoothie
Rise and shine with this fresh and fruity tropical sunshine smoothie filled with mango, pineapple, orange and carrots.
Ingredients
- 2 medium carrots, finely grated on a box grater (or cut in chunks if you have a high powered blender)
- ½ cup/70g frozen mango
- ¼ cup/46g frozen pineapple
- The juice of half a medium juice orange
- 4 oz/113g plain yogurt (I like sheep's milk here but you can also use a non-dairy yogurt for a vegan/paleo version)
- ½ inch piece of ginger, peeled and grated
Instructions
- Combine all ingredients in a high-speed blender and blend until smooth. Serve immediately.
