Gluten-Free Homemade Pita Chips (or Use Store-Bought Pita Bread or Pita Chips)
- Gluten-free flours – We’re using a combination of arrowroot and coconut flour for a crisp and crunch chip.

Mediterranean Nachos
Enjoy a healthy twist on nachos made with pita chips, fresh tomatoes, hummus, and
feta. A flavorful Mediterranean appetizer perfect for snacking or parties.
Ingredients
For the Mediterranean Nachos:
- 3.5 ounces/100g sheep’s milk feta
- 2 Tablespoons/30g full fat yogurt
- 1 Tablespoon/15ml fresh lemon juice
- 3-4 small vine tomatoes, seeded and chopped
- ½ cup/65g Kalamata olives, finely chopped
- ¼ cup finely chopped parsley
- 1Tablespoon/15ml extra-virgin olive oil
- ½ a clove of garlic, finely grated
- ¼ teaspoon dried oregano
- ¼ teaspoon fine sea salt
- ½ a 15.5 ounce (439g) can of chickpeas, rinsed, drained and pat dry
- 5 ounces/284g store-bought or homemade hummus
- Store-bought pita bread or pita chips for serving (or use homemade pita chips recipe below)
For the Gluten-Free Pita Chips:
- 2 Tablespoons/ 18g coconut flour
- ½ cup/ 64g arrowroot flour/starch
- 1 ½ Tablespoons/ 22g extra virgin olive oil
- ¼ cup/60ml filtered water
- ½ teaspoon dried oregano
- Coarse sea salt
Instructions
Make the Toppings:
- In a small bowl, whisk together the feta, yogurt and lemon juice until smooth. Chill until needed.
- In a large bowl whisk together the olive oil, garlic, oregano, and salt.
- Add the chopped tomatoes, olives and parsley and chickpeas and toss to combine. Set aside to marinate.
If Using Store-Bought Pita Chips or Bread:
- If using store-bought pita chips or crackers (skip this step and move on to the assembling).
- If using store-bought pita bread, cut into triangles, separate the layers, brush with olive oil and bake at 400 F for 8-10 minutes or until lightly browned (flipping the triangles about halfway through.)
For the Homemade Gluten-Free Pita Chips:
- Pre-heat oven to 400 F.
- Combine all the ingredients except for the oregano in a medium bowl and stir together until a dough forms.
- Roll the dough between your hands to create 4 balls.
- Pat the dough balls into a circle between two pieces of parchment paper and roll each into a circle about ⅛- to 1/16 inch thick.
- Using a pizza cutter or sharp knife divide the dough evenly into triangles.
- Sprinkle with a pinch of salt and the oregano.
- Place parchment on top again and pat to adhere the toppings.
- Remove top parchment and place the bottom parchments on a baking sheet. (You may need to use 2 baking sheets with two rounds on each)
- Bake rotating once, until pita chips are just starting to turn a golden color around the edges (about 12 to 14 minutes).
- Let cool and break into triangles.
- Use immediately or store in an airtight container.
Assemble Your Mediterranean Nachos:
- Spread a layer of pita chips on a serving platter.
- Dollop spoonfuls of hummus and feta yogurt mixture over the top.
- Spoon the tomato chickpea topping mixture generously over the chips.
