Sparkling Pineapple Mint Juice

Sweet fresh pineapple is paired with fresh mint and sparkling water in this sparkling pineapple juice.

(Just a quick note to let you know that I’m sharing a few of my favorite summer drink ideas over at Good Life Eats today.  Come join me over there and say hi!)

During summer the best drinks are full of flavor and just plain refreshing.  I first fell in love with the idea of a pairing pineapple with mint when I did the BluePrint Cleanse. Their juice was so good that I had to recreate a version of it at home.  The sweet yet acidic taste of fresh pineapple combines perfectly with the fizzy bubbles of sparkling water. Add a touch of fresh mint and it becomes something uniquely refreshing.

When it’s hot outside nothing quenches your thirst quite like a glass of pineapple mint juice. This juice makes your mouth tingle it’s so refreshing.  Want to make an adult version? Add a little vodka or rum and garnish with pineapple spears.
