Fresh ginger, lemon juice, honey, and water combine to create a refreshing homemade honey ginger lemonade that’s naturally sweetened and perfect for summer.
Ingredients
For the honey ginger syrup:
- ¼ cup/84g raw honey
- ½ cup/120ml water (filtered or spring)
- 3oz/90g fresh ginger root, peeled and finely grated on a microplane zester
For the lemonade:
- 1 cup/240ml fresh squeezed lemon juice,
- 4 cups/950ml cold filtered or spring water
- 1 recipe for honey ginger syrup
- Ice for serving
- Sliced lemons for garnish

Instructions
To make the honey ginger simple syrup:
- Place the honey, ginger and water in a medium saucepan, bring to a simmer stirring until honey is completely dissolved. Turn off heat, cover and let steep for 15-20 minutes.
- Strain syrup thorough a fine mesh sieve, pressing hard on the ginger pulp discarding the solids. Pour into a bottle or jar, and chill until cold, about 1 hour. The syrup will keep in your refrigerator for up to two weeks.
To make the lemonade:
- Add the freshly squeezed lemon juice and the honey ginger syrup to a large pitcher. Add cold water (more or less depending on how strong you like your lemonade).
- Refrigerate until ready to serve (or pour into popsicle molds)
- Pour lemonade over ice filled glasses, top with a slice of lemon.

- Replace ½ the water with sparkling water (If you are using sparkling water don’t add it until you are ready to serve so that it doesn’t lose its fizz. )
