This vibrant and delicious Moroccan carrot salad is an easy make-ahead dish that packs up nicely for lunches, picnics and outdoor parties.
Ingredients
- 1 ½ pounds/681g carrots, peeled and sliced into ¼-½ inch pieces
- 2 Tablespoons/30ml extra virgin olive oil
- 1 Tablespoon/15ml fresh lemon juice
- 1 garlic clove, grated on a microplane
- ¼ teaspoon ground cumin
- ¼ teaspoon paprika
- ⅛th teaspoon cayenne pepper
- ¼ teaspoon fine sea salt
- ¼ cup finely chopped fresh cilantro
