Roasted Blueberries:
What takes these blueberry parfaits from good to great however are the roasted blueberries. Roasting blueberries concentrates and intensifies their flavor creating a deliciously jammy addition to the parfaits while maintaining the shape of the berries. Roasting the berries rather than cooking them on the stove prevents the blueberries from falling apart so what you are left with are mainly whole but slumped berries in a syrup rather than a sauce. The roasted blueberries create little pops of concentrated berry flavor throughout the parfaits which are a nice contrast to the creamy yogurt and crunchy granola.

These are three main parts to a yogurt parfait: (1) the yogurt (2) the fruit and (3) the topping and each are completely customizable based on diet or preference. You can use regular or dairy-free yogurt, fresh or frozen fruit and either homemade or store-bought granola. Here’s what you’ll need :

- Blueberries – You can use either fresh or frozen blueberries. (If you are using frozen you’ll need to adjust the cooking time.)
- Maple Syrup – You’ll need maple syrup to sweeten the roasted blueberries but you can also substitute honey for a non-vegan version.
- Lemon – You’ll need both the juice and zest.
- Yogurt – Use your favorite thick and creamy yogurt either regular or dairy-free.
- Granola – Use your favorite granola either homemade or store-bought and nut-free or grain-free if needed.

How to Make Blueberry Parfaits:

- You’ll start by making the roasted blueberries which can be made ahead of time and stored in the fridge until needed. You’ll combine the blueberries with the maple syrup, lemon juice and lemon zest in a large oven-safe dish and roast the berries in the oven until they’ve released their juices and are sitting in a sticky syrup. Let the berries and syrup cool and store them in the fridge until you’re ready to make the parfaits.
- When you are ready to serve simply alternate layers of yogurt, roasted blueberries and granola in serving glasses or make your parfait in a small mason jar with a lid for a to-go option.

Ingredients
- 1 lb/454g blueberries (fresh or frozen)
- 1 Tablespoon/15ml fresh lemon juice
- 2 strips of lemon peel
- ¼ cup/60ml maple syrup (or honey for a non-vegan version)
- 4 cups/908g plain yogurt (dairy or non-dairy)
- 1 cup/90g granola of choice (nut-free or grain-free if desired - links to recipes in NOTES section below)
Instructions
- Preheat the oven to 400°F.
- Toss the blueberries with the lemon juice, lemon peel and maple syrup in a large oven-proof dish and spread into an even layer.
- Roast until the berries are slumped and syrup is bubbling around the blueberries stirring once halfway (about 15-18 minutes for fresh and 20-23 for frozen).
- Let cool completely in pan, remove lemon strips and transfer blueberries to an airtight container and chill in fridge until needed.
- To make the parfaits alternate layers of yogurt and roasted blueberries finishing with the granola in individual serving glasses and serve immediately.
