🧾 Ingredients (with Notes)
Here are a few helpful notes on the ingredients used in these pea fritters and the yogurt sauce. As always, you’ll find the full list of ingredients and exact measurements in the recipe card below.
🥣 Yogurt Mint Sauce
- Greek yogurt: Thick Greek yogurt creates a creamy, tangy base for the dipping sauce. A full-fat version will give you the best texture and flavor.
- Fresh lemon juice: Adds brightness and acidity to balance the richness of the yogurt. Freshly squeezed juice gives the best flavor.
- Fresh mint: Mint adds a cool note that complements the fritters and enhances their fresh flavor.
- Extra virgin olive oil: A drizzle of olive oil adds richness and a subtle fruity note. Choose a mild one so it doesn’t overpower the mint.
🟢 Pea Fritters
- Frozen peas: Frozen peas are ideal here—they’re naturally sweet, tender, and easy to keep on hand. Blanching helps preserve their bright color and texture.
- Eggs: Eggs act as the binder, helping hold the fritters together while giving them structure and a soft interior.
- Green onions (scallions): These add a mild onion flavor without overpowering the peas and bring a bit of freshness.
- Garlic: A small amount of garlic adds depth to the sweetness of the peas.
- Fresh mint: Adds brightness and a fresh herbal note that complements the peas and feta.
- Lemon zest: Lemon zest adds a light, fragrant citrus note that lifts the overall flavor.
- Feta cheese: Feta adds a salty, tangy contrast to the sweet peas. Sheep’s milk feta is especially creamy and flavorful, but any good-quality feta will work.
- Coconut flour: Coconut flour helps absorb moisture and gives structure to the fritters without making them heavy. Letting the batter rest allows it to fully hydrate.
- Olive oil (for cooking): Olive oil helps create crisp, golden edges. Make sure the pan is properly heated before adding the batter.
👩🍳 How to Make Pea Fritters (Step-by-Step)
1. Prepare the yogurt mint sauce
In a small bowl, whisk together the yogurt, lemon juice, and fresh mint until smooth. Season with salt and pepper to taste, then drizzle with a little olive oil. Set aside.
2. Blanch the peas
Bring a large saucepan of salted water to a boil. Add the peas and cook until just tender, about 2–3 minutes. Drain well and mash coarsely with a fork, or pulse briefly in a food processor until chunky.
3. Make the fritter batter
In a large bowl, whisk together the eggs, scallions, mint, lemon zest, feta, and coconut flour. Add the mashed peas and mix until combined. Let the batter sit for a few minutes to allow the coconut flour to absorb moisture.
4. Fry the fritters
Heat a thin layer of oil in a frying pan over medium heat. Scoop heaping tablespoons of batter into the pan and press into small discs. Cook in batches, flipping halfway through, until golden brown and crispy on both sides.
5. Serve
Serve the fritters warm with the yogurt mint sauce on the side for dipping.
🔥 Tips for Crispy Pea Fritters
- Don’t skip draining the peas well after blanching
- Let the batter rest so the coconut flour can absorb moisture
- Start with a properly heated pan for a golden crust
- Cook in batches to avoid overcrowding

🔄 Variations
- No feta: Skip it or use a dairy-free alternative
- Different herbs: Try parsley, dill, or basil instead of mint
- Add vegetables: Finely chopped cooked broccoli works well
- Dairy-free option: Use a plant-based yogurt for serving
🍽️ What to Serve With Pea Fritters
- A crisp green salad
- A vegetable platter
- Extra yogurt sauce or tahini-based dips
They also work beautifully as part of a mezze-style spread.
🥡 Storing and Reheating Vegetable Fritters
- Refrigerator: Store in an airtight container for up to 3-4 days
- Reheat: Warm in a skillet or oven to restore crispness
- Freeze: Freeze cooked fritters in a single layer, then transfer to a container

Rhonda says
Would it work to use regular flour? Or is there something specific about coconut flour?
Sylvie says
I used coconut flour to make this recipe gluten-free and grain-free but yes you can use regular flour however it will not be the same amount as the coconut flour. Coconut flour absorbs much more liquid so you will have to experiment and see how much regular flour will create a batter that holds together without being too wet or dry. Unfortunately I have not tested this recipe with regular flour so I can't say how much that will be. Hope that helps!
