- 1 cup/170g frozen petite peas
- ¼ cup fresh dill fronds
- ¼ cup fresh parsley leaves
- Zest of ½ a lemon
- 1 Tablespoon/15ml fresh lemon juice
- 1 small clove of garlic
- ½ teaspoon sea salt
- ¼ cup/60ml extra-virgin olive oil
- 1 ounce/28g grated pecorino
Instructions
- Prepare an ice bath filled with ice cubes and cold water in a large heatproof bowl. Set aside.
- Bring a large pot of salted water to a boil. Add the peas and blanch for 1 minute, or until bright green. Strain and place into the ice bath to stop cooking.
- Remove peas from the ice bath and spread on a clean kitchen towel to drain thoroughly.
